Paleo Banana Nice Cream
Last week my Instagram feed was back to back ice cream cones for #NationalIceCreamDay and I’ll admit, my ice cream cravings were through the roof. I wanted it and I wanted it bad. It didn’t help that it was 90 degrees and the smallest movement sent me into a full body sweat. I needed something cold and delicious but I knew that the temporary high from traditional ice cream would fade into regret in just a few short minutes. My desperation for a cool creamy summer treat led me to create this Paleo Banana Nice Cream. My pain has become your pleasure. You’re welcome in advance.
I think we can all agree that ice cream is the best thing on the planet: smooth, creamy, sweet, a sugar-rush that floods through your whole body like a warm hug. All your cares melt away and as the last spoonful reaches your lips, ecstasy. The only problem, and oh how I wish it wasn’t so, is that for many almost immediately after you finish that last bit, the stomach ache sets in, the sugar high fades into a headache and the sweet, sweet feeling that everything in the world was right fades into an explosive bathroom visit. Let’s choose something better for ourselves, shall we?
I don’t mean to sensationalize the allure of ice cream. Yes, it’s delicious but there are equally as satisfying treats with none of the downside of traditional ice cream. Of course there’s the huge amount of sugar in the prepackaged stuff. The bigger issue is that dairy, the way we know it in North America, is pretty disgusting if you ask me. I don’t really want to get into it, after all that sexy ice cream talk I would hate to kill your vibe. Instead I’ll just say that swapping milk for organic coconut milk is not only delicious, it has tremendous health benefits as well.
Needing to satisfy an intense ice cream craving in a healthy way, a light bulb went off in my mind. The day before I had placed 3 way too ripe bananas in the freezer for future use as smoothies, perfect! These bananas had a much more epic fate in store now. A few minutes later, my food processor whirled and I knew that I was at the door of ice cream heaven, paleo ice cream heaven.
I’ve talked about the benefits of a paleo diet before. As someone who needs to avoid gluten, dairy and soy to keep my body happy, a paleo diet is almost the default. When I’m searching for recipes, surveying a buffet or thinking about what to cook for a party, my mind automatically looks for paleo options. Not only are they free of the list I just rattled off, they also contain no sugar or added chemicals/preservatives. Paleo just means clean, simple food; kind of like this Paleo Banana Nice Cream recipe.
- 3 very ripe frozen bananas *
- ½ can full fat organic coconut milk
- 1 tbsp coconut oil
- 1 tsp pure vanilla extract
- Place all ingredients in the food processor or blender and blend until smooth.
- Transfer ice cream to a freezer safe dish and allow to set for about 30 minutes. *If your bananas aren’t frozen you’ll have to leave it in the freezer longer to set.
- Remove from the freezer and enjoy. If there are leftover you can leave them in the freezer for up to a week. When you’re ready to eat leave it out for about 10 minutes until you can easily spoon the nice cream.
Feel free to top your Paleo Banana Nice Cream with fruit, dark chocolate shavings, roasted nuts, maple syrup, fresh basil or mint, anything you like really. Just keep it simple and keep it paleo, that’s why you’re looking at this recipe after all. This is a healthy treat that hasn’t been junked up by anything artificial and your new summer staple.
