4 Ingredient Gluten Free Pancakes
Hello. It’s me. Your new favourite pancake recipe. Did you come over, just to bake? Trying to make an Adele song happen here but let’s just focus on the pancakes. These bad boys are super duper tasty. Pancakes have been an absolute favourite of mine since I was a kid, I’m pretty sure every kid in North American and maybe even the world feels the same. But as I found out about all my many food sensitivities it seemed like pancakes were going to be off the table.
Happily, these gluten free pancakes solve all those problem. The first is that they are obviously gluten free pancakes. The second is that they have no added sugar. the third is that they are dope, cause I cook dope shit. That’s a Kanye/Dave Chapelle reference lol
If you didn’t know the best bananas for cooking are super super ripe. Like the ones covered in black spots. The basically rotten bananas. The more ripe they are the sweeter they are, and once they are mixed into a batter you won’t be able to tell at all that they were once basically on their way to the garbage. The other great thing about that is that when you’ve got a bunch of bananas you haven’t had a chance to eat yet and you see them going bad, you can freeze them. The next time you’re ready to make these pancakes you’ve got the perfect bananas.
- 4 overripe bananas (fresh or frozen - if frozen, drain some of the excess liquid once defrosted)
- 1 egg
- 1 1/2 cups oat bran
- 1 tsp aluminum free baking powder
- 1/2 tsp butter or ghee
- Mash bananas in a medium bowl
- Add eggs, oat bran and baking powder, allow to sit for 10 minutes
- Heat a large frying pan or griddle then melt butter or ghee
- Spoon batter into the heated ghee into desired pancake size, cook for 2-3 minutes per side until golden brown
I hope you enjoy this recipe as much as I do. I created it out of a desperate need for cake and a whole bunch of rotting bananas but now have come to love it. I’m thinking I might need to make pancakes for dinner tonight just so I can have these in my belly right now. Mmmm pancakes.
